  • 1 large apple, peeled and grated About 250 g.

  • 1/2 cup unsweetened applesauce Adds moisture without added sugar.
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon Add more for extra flavor if desired.
  • 1/4 teaspoon salt Enhances the sweetness.

  • 1/2 cup chocolate chips or raisins Use as desired for added flavor.

Instructions

Preparation

  • Preheat your oven to 350°F (180°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a mixing bowl, combine the rolled oats, grated apple, mashed banana, applesauce, vanilla extract, cinnamon, and salt. Stir well until everything is evenly mixed.
  • If using, fold in the chocolate chips or raisins until they’re dispersed throughout the mixture.
  • Scoop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 15-20 minutes or until the cookies are set and slightly golden around the edges.
  • Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. If you prefer your cookies warm, pop them in the microwave for about 10 seconds.
