  • Use leftover beef or other ingredients to minimize waste.
  • Packed with flavor, these will quickly become a family favorite.

Ingredients

  • 1 pound (450 g) ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon (5 g) chili powder
  • 1 teaspoon (5 g) cumin
  • Salt and pepper, to taste
  • 4 large tortillas (10-inch/25 cm)
  • 1 cup (100 g) shredded cheese (cheddar or your choice)
  • 1 cup (150 g) lettuce, shredded
  • 1 medium tomato, diced
  • ½ cup (120 g) sour cream (optional)
  • Salsa or hot sauce, to taste (optional)

Ingredient Notes

Using fresh herbs and spices can elevate the flavor of the beef. Feel free to substitute ground beef with ground turkey or chicken if you prefer a lighter option. Plus, using whole wheat tortillas can add extra fiber to the meal.

Kitchen Tools Needed

  • Skillet
  • Wooden spoon
  • Measuring spoons
  • Cutting board
  • Knife

Step-by-Step Instructions

  1. In a large skillet over medium heat, add the diced onion and sauté until it’s translucent, about 4-5 minutes.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Increase the heat to medium-high and add the ground beef, breaking it apart with a spatula. Cook until browned and cooked through, about 6-8 minutes.
  4. Stir in the chili powder, cumin, salt, and pepper. Mix well and allow it to cook for another minute to let the spices bloom.
  5. Remove the skillet from heat. Warm the tortillas in a separate dry skillet or microwave for 10-15 seconds until pliable.
  6. To assemble, place a generous scoop of the beef mixture onto the center of each tortilla. Top with cheese, lettuce, tomato, and a dollop of sour cream, if desired.
  7. Fold the bottom of the tortilla up over the filling, then fold in the sides and roll tightly to enclose the filling.
  8. Serve immediately, or wrap in foil to keep warm!

Pro Tips

  • For extra flavor, consider adding some diced jalapeños to the beef mixture while cooking.
  • To get that perfect warm tortilla, wrap them in a clean kitchen towel after heating; this keeps them soft and pliable.
  • If you have company, set up a wrap station with all the toppings out for a fun, build-your-own meal experience.

Common Mistakes

  • Don’t rush the browning of the beef; it adds flavor.
  • Avoid overfilling the tortillas to prevent them from tearing when you roll them up.
  • Make sure the skillet is hot enough to cook the beef evenly without steaming it.

Variations

  • Swap beef for cooked quinoa or black beans for a vegetarian option.
  • Experiment with different cheeses like pepper jack or feta for a unique twist.
  • Add sautéed peppers or corn for an extra crunch and color.

Serving Suggestions

These wraps are delicious on their own, but pairing them with a side of tortilla chips and guacamole or a fresh garden salad elevates the meal.

Storage Instructions

Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating Tips

To reheat, wrap the wraps in foil and place them in a preheated oven at 350°F (175°C) for about 10 minutes until warmed through. You can also microwave them in 30-second intervals, but they might lose a bit of texture.

  1. Sounds good but two things catch my eye. From the photo of the prep it looks more like you’re simply rolling the tortilla up with the filling in it. Not sure where the “Fold the bottom of the tortilla up over the filling, then fold in the sides and roll tightly to enclose the filling” really come in? Secondly, in the photo it looks much more like phyllo dough given the luscious looking crispy finish?
